School is out for the summer, so naturally I picked up some watermelon. I was just barely starting to form this idea in my head about what I wanted to do for this farm stand. And of course I start to think about seeing pickled watermelon rind and I had to give it a go. With a little help from the kids, chat gpt, some old recipes, and a little determination...it came together perfectly. After the first batch...I was told not to change the recipe...so here we are on watermelon #8 of the summer and still going strong. That first watermelon launched the whole "use every part" theme that has begun to emerge. Groceries are expensive enough as it is. If we can squeeze 3-4 recipes out of 1 product...then that's what were gonna do. (Just wait until I tell you about our sour (and sweet) watermelon rind candy! lol) Thank goodness we decided to plant way more watermelon then we thought we needed =) If you haven't tried it...we can fix that!
